10 Standout Dishes from Alison Cook’s Upcoming Top 100 Houston Restaurants List

Alison Cook – a two-time James Beard Award winner for restaurant criticism and an M.F.K. Fisher Distinguished Writing award recipient – has been reviewing restaurants and surveying the dining scene for the Houston Chronicle for 12 years.

Alison Cook will soon release her the much anticipated list of top 100 restaurants picks for 2018. The Korean Butter Poached Crab at Tris, made the short list of “10 Standout Dishes from Alison Cook’s Upcoming Top 100 Houston Restaurants”, published on Houston Chronicle on September 24.

“I laughed in delight when I realized what chef Austin Simmons had accomplished with his lush, provocative kimchi pancake at Tris, the rechristened and freshly remodeled edition of his Woodlands staple Hubbell & Hudson Bistro. With its cargo of dewy lump crabmeat and its gloss of kimchi beurre blanc, it tasted like a crab cake reimagined for the 21st century. The house-fermented kimchi contributed just the right edge.”
