Chef Austin Simmons and our team recently hosted an exclusive, pop-up wine dinner with Macauley Vineyard on February 19th. Special guests were invited to attend a five-course dinner alongside Macauley Vineyard Proprietor, Mac Watson.
The wines served included the 2017 Macauley Bacigalupi Vineyard Chardonnay paired with our Shitake Mushroom Tart; 2015 Macauley Cabernet Sauvignon paired with our South Texas Axis Venison; 2015 Macauley Reserve Cabernet Sauvignon paired with our 72-hour Short Ribs; and 2016 Macauley “Old Vine” Zinfandel paired with our Roasted Rack of Lamb. Macauley Vineyard originally began operation in the early 1980’s before Watson revived and led it into its second generation in 2001. All of the fruit for Macauley’s wines are purchased from select vineyards in Napa Valley and their goal is to make wines of extraordinary depth and personality.
