‘The Cut’ CollaborEIGHT Dinner

“THE CUT” Collabor’EIGHT’ Dinner featured a ranch to plate concept & more, with cattle rancher Jordan Beeman, knife maker Dr. Stephen Pustilnik and the Executive Chef Austin Simmons.

A fourth generation cattle rancher, Jordan Beeman manages nation’s largest family-owned branded beef company – Heartbrand Beef and is the largest producer of rare Japanese Akaushi cattle in the world. Jordan is also the President of the American Akaushi Association and sits on the board of Bovina Feeders, a member of National Cattlemen’s Beef Association, and the North American Meat Institute.

A forensic pathologist with a passion in cooking, Dr. Stephen Pustilnik has spent much of his life wielding a knife. His Houston kitchen is crowded with a formidable collection of the world’s sharpest knives. Dr. Pustilnik mastered knife making in 2012 and today supplies his custom creations at Houston Edge Works to a long waiting list of chefs, home cooks and pathologists.
