‘Hubbell & Hudson Bistro’ is soon to be transitioned into the brand-new ‘TRIS’ concept to elevate the dining scene in The Woodlands’ Waterway square.
Hubbell & Hudson Bistro will serve its last meal on Saturday, August 25th and the grand-opening for the TRIS is scheduled for early September. Hubbell & Hudson Bistro space at the 24 Waterway Avenue will be transformed into the new TRIS to include new flexible seating arrangements up to 60 guests in the main dining room. TRIS will also feature multiple private dining rooms, ideal for business meetings or any special occasion up to 100 seating capacity.
Hubbell & Hudson Bistro will participate in the Houston Restaurant Weeks in August, and the last service at the Bistro will be offered on Saturday, August 25th. A brief closure will lead the way for the transformations, and TRIS is expected to be in service in early September. Portfolio for Hospitality is handling the Interior design changes and the upgrades at the new TRIS.
“While interior design changes will completely transform the Bistro into a-whole new TRIS concept, our guests should expect major changes to our menu as well as our service standards,” said Executive Chef Austin Simmons, “The elevated dinner experience at TRIS will even escalate our Cureight concept to a new level.”
A casual lunch service along with a high-end dinner experience will be offered at TRIS every Tuesday to Saturdays. Executive Chef Austin Simmons’ new menu at TRIS will combine worldly flavors with classic culinary techniques presented in familiar, yet sophisticated dishes. Artisan, re-envisioned classic cocktails, select craft beer along with an ever evolving new and old-world varietals will be offered at TRIS.
“The name Bistro never completely translated the new cooking techniques and the refined menu we adopted since the Hubbell & Hudson Market closure back in 2014. The new TRIS name will help us separate all three concepts in The Woodlands more clearly.” Executive Chef Austin Simmons stated.
The following individuals will be influential in the TRIS transformation:
- Austin Simmons, Executive Chef
- Chris Perry, General Manager
- Courtney Taraboi, Chef de Cuisine
- Brian Stanek, Executive Sous Chef
- Joshua Olivier, Beverage Manager
- Dominique Vasquez, Private Dining Manager
- Angela Mireles, Maitre d’
At TRIS, you’ll find Chef Simmons treats his team and restaurant like his own family. Which is why it’s only natural that TRIS is the name of his own beloved daughter. Chef Simmons said: “The team is more than just family to me, they are the heart of the restaurant and partners in the success of everything at TRIS. Without the dedication and partnership from the team, TRIS wouldn’t run with the same love and commitment that makes it so special to the community.”
